With nearly 3,000 different species, in the Province of Quebec, it\u2019s sometimes difficult to differentiate edibles from toxic mushrooms. Therefore, Green Trail is helping by showing you 5 edible mushrooms easily identifiable and 5 toxic mushrooms to avoid.<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>1 \u2013 BLACK TRUMPETS (Craterellus fallax)<\/strong><\/h3>\n\n\n\n<p>Despite its name, the Black trumpets are excellent edibles. Recognizable by its funnel-shaped hat and its black gray color, this species of mushroom is unique and doesn\u2019t have any lookalike. This mushroom is found in deciduous forests, in heavy and very humid soils, from mid-July to September. It is important to consume it within 24 hours after the harvest to maintain maximum flavor. It will be perfect for an omelet or with meat!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/craterellus_fallax_01.jpg\" alt=\"\" class=\"wp-image-12892\" width=\"700\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/craterellus_fallax_01.jpg 794w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/craterellus_fallax_01-768x586.jpg 768w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/craterellus_fallax_01-245x187.jpg 245w\" sizes=\"(max-width: 794px) 100vw, 794px\" \/><figcaption>\u00a9 Michael Kuo<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>2 \u2013 LOBSTER MUSHROOM (Hypomyces lactifluorum)<\/strong><\/h3>\n\n\n\n<p>Hypomyces lactifluorum is perfect for making a side sauce, or in rice and simmered recipes. Its crunchy texture and nutty flavor easily adapt to many dishes. But, when it\u2019s too old, it smells unpleasant. Its flamboyant orange color will allow you to notice it from afar. It\u2019s usually found in light woods with sandy soils, from July to October.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hypomyceslactifluorum.jpg\" alt=\"\" class=\"wp-image-12894\" width=\"700\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hypomyceslactifluorum.jpg 512w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hypomyceslactifluorum-249x187.jpg 249w\" sizes=\"(max-width: 512px) 100vw, 512px\" \/><figcaption>\u00a9 meronwood.com<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>3 \u2013 HEDGEHOG MUSHROOM (Hydnum repandum)<\/strong><\/h3>\n\n\n\n<p>The Hedgehog, a species that is found is the same environment as Black trumpets from July to September, is also a good edible, easy to recognize. This one stands out by its whitish hue and its circular hat with spines below. Moreover, no poisonous mushroom looks like it! It has a very discreet taste but its crunchiness adds texture to a dish. Therefore, it\u2019s perfect to consume it saut\u00e9ed in butter and garlic or as a side dish with red or wild meat.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hydnumrepandum.jpg\" alt=\"\" class=\"wp-image-12899\" width=\"700\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hydnumrepandum.jpg 640w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/hydnumrepandum-280x187.jpg 280w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><figcaption>\u00a9 Raymond McNeil<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>4 \u2013 LAWYER&#8217;S WIG (Coprinus comatus)<\/strong><\/h3>\n\n\n\n<p>The Lawyer\u2019s wig, on the other hand, has the particularity of liquefying in 24 hours. If you pick it up, you have to consume it quickly. During Spring and from August to October, you could find it in meadows, on the edges of paths or roads and even in the lawn near your house. It is important to watch out where you harvest it. If the lawn is contaminated by herbicides, don\u2019t eat the mushroom! Its \u201chairy\u201d white shape might make you hesitate with the Common ink cap, which is toxic. If you have any doubts, don\u2019t touch it. And, if you\u2019re sure it\u2019s a Lawyer\u2019s wig, you can cook it while it\u2019s still white, in a white sauce or in a butter spread on bread. It has a slightly fruity scent which is also reflected in its flavor. This delicious tasting species is perfectly adapted to all types of dishes and can also be eaten on its own. You could find it from mid-Summer to mid-Fall. However, be careful not to confuse it with the Eastern Jack-o\u2019Lantern mushroom! Once again, if in doubt, don\u2019t pick it!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Cantharellus_cibarius-800x445-1.jpg\" alt=\"\" class=\"wp-image-12905\" width=\"600\" height=\"334\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Cantharellus_cibarius-800x445-1.jpg 800w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Cantharellus_cibarius-800x445-1-768x427.jpg 768w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Cantharellus_cibarius-800x445-1-280x156.jpg 280w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption>\u00a9 antropocene.it<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>1 &#8211; COMMON INK CAP (Coprinopsis atramentaria)<\/strong><\/h3>\n\n\n\n<p><strong>On the toxic mushrooms side, <\/strong>we find the Common ink cap which grows from Spring to Fall. He is recognizable by his \u201cclosed\u201d hat which can be confused with the Lawyer\u2019s wig seen above. On the other hand, the Common ink cap is distinguished by its streaked brown gray color and its hat is irregularly pleated. It is poisonous when mixed with alcohol. Even if the recipe doesn\u2019t call for alcohol but you consume it with the meal, the toxic effects will be present. It\u2019s better not to take any risks!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Coprinopsis-atramentaria-2-Kit-Scates-Barnhart.jpg\" alt=\"\" class=\"wp-image-12911\" width=\"700\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Coprinopsis-atramentaria-2-Kit-Scates-Barnhart.jpg 683w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/Coprinopsis-atramentaria-2-Kit-Scates-Barnhart-267x187.jpg 267w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><figcaption>\u00a9 Kit Scates Barnhart<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>2 \u2013 EASTERN JACK-O&#8217;LANTERN MUSHROOM (Omphalotus illudens)<\/strong><\/h3>\n\n\n\n<p>Its shape and color are similar to those of the Golden chanterelle seen above. However, its flesh is luminescent in the dark. It can also be distinguished by where it grows: On rotten wood or near large roots. It also drops orange, sticky and slimy droplets. You could see that in nature from July to September. The curved foot is clearer and has a ring under the cap. It grows from Spring to Fall and if you see this mushroom, don\u2019t touch it. It smells a faint unpleasant odor of withered roses. If you see it, avoid it, it\u2019s also deadly!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/amanitavirosa.jpg\" alt=\"\" class=\"wp-image-12920\" width=\"700\" srcset=\"https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/amanitavirosa.jpg 640w, https:\/\/greentrail.ca\/wp-content\/uploads\/2020\/08\/amanitavirosa-280x187.jpg 280w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><figcaption>\u00a9 Raymond McNeil<\/figcaption><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>5 \u2013 BROWN ROLL-RIM (Paxillus involutus)<\/strong><\/h3>\n\n\n\n<p>Finally, the Brown roll-rim has a wid, spreading circular hat, funnel-shaped in the center. It is seen from August to October and it gets sticky with moisture. It can be red, yellow or brown, with dark brown spots. However, there are some easily recognizable and abundant species that will allow you to give taste and texture to your recipes.
